CookingI have another hobby besides my artwork, writing, fandom activities… cooking. I love to cook, bake, and create masterpieces that will awaken your taste buds and liven all of your senses. My mother taught both my little brother and I to cook when we were but young men and I have never stopped. I actually worked in the restaurant industry for 10 years and some days dream of what it would be like to actually own my own restaurant where I could serve the kind of food that I love and have a passion to make. I actually baked cakes semi-professionally for over ten years but finally put my decorating tips and pans down as I had entirely too many irons in the fire and wanted to free my time up to concentrate on a few things that I could enjoy and do right, all the time rather than spread myself as thin as I was getting.

I love simple down to earth foods that are bursting with flavor… and sometimes a lot of spice. Growing up in Texas has allowed me to become accustomed to very hot and spicy foods, sometimes so hot they make your eyes water, your brow sweat, and set your mouth a flame. Although there are some that would say that’s just too darn hot, but I love it. So, you can probably guess one of my favorite food groups is Latin/Hispanic/Mexican. Aren’t they the same? Well, not always and not really. Latin would be more central/south American; Mexican is of course from Mexico; and Hispanic would be of Spanish in origin. While they are all very similar in flavor profile they are also very distinctly different and sometimes from region to region within their culture.

One of my favorite recipes to make is homemade salsa. I actually have two versions… one that is completely from scratch and the other that is more like the Sandra Lee style, 70% ready-made and 30% fresh ingredients. The made from scratch is an extremely hot salsa whereas the Sandra Lee style can be tailored to be hot, medium, mild, or extremely mild. Whatever your flavor desires you can make one or even both.

I also enjoy cooking Frijoles Rancheros (Ranch Style Beans) and several of my Mexican friends love them, so I know I'm doing something right when I serve them! Find the recipe for Adan's Frijoles Rancheros right here. Be warned, my beans can be kind of spicy as well, so use as much or little of the jalapenos as you desire.

Another favorite of mine to make is my easy to make No Bake Cheesecake. It is probably the simplest recipe by far that I have ever made that everyone loves and noone can believe that its not baked and that its made from scratch as well. Most of the time, you'll get accused of buying the box mix, but its just so much better than a box mix! You can find my No Bake Cheesecake recipe right here.

My final recipe that I love to make is another very simple recipe... a Banana Split Icebox Brownie Cake. As I'm a diabetic, I make it with sugar free items and absolutely no one can tell the difference. You can find my recipe for the Banana Split Icebox Cake right here.
